Sicilian Caponata the Nando’s way
Serves 6
2 eggplants (med-large)
2 sticks celery
1 each red, yellow, and green bell peppers
i onion, chopped
2/5 cup olive oil
1 salted anchovy
5 tbsp tomato paste
4 tbsp capers, drained
4 tbsp currants
5 tbsp white wine vinegar
3 tbsp & a pinch sugar
i tbsp Nando’s Peri-Peri Hot Grinder(or more to taste)
salt and pepper to taste
4 tbsp toasted almonds (slivered)
4 tbsp basil leaves, chopped
4 tbsp mint leaves, chopped
1. Cut the eggplants, keeping the skin on, into 1.5 in chunks. Cut the celery into thick slices. cut the peppers into large pieces.
2. Heat the olive oil in a large frying pan and add the onion and anchovy. Fry gently until the onion is soft and the anchovy is melted.
3. Add the rest of the vegatables and fry until cooked, about 20 mins. Stir in the tomato paste, capers, currants, vinegar and sugar. Season to taste with salt and pepper.
4. Serve hot or cold sprinkled with the toasted almonds, basil and mint.
